Tucumán cheeses (made with goat, cow and even sheep milk) are another delight for the palate. Some of the most popular cheese ranches in Tucumán are found in Tafí del Valle and San Pedro de Colalao, although they can also be found in the center. They can be eaten in bites and as a dessert accompanied by jellies, honey or syrup. Quesillo, on the other hand, is a type of cheese prepared with cow or goat milk. This is left to curdle and, once the whey has been drained, it is hung on wire ropes that give it its elongated shape. It can be eaten alone or accompanied with syrup or cane honey.
