Gaznate Recipe (30 units)
Ingredients
12 yolks
1 teaspoon cognac
Flour required amount
1 tablespoon melted beef fat
500 gr. of fat for frying.
500 gr. of dulce de leche confectioner.
Preparation
Beat the yolks until smooth and add the cognac by drops.
Gradually add the flour until it forms a soft dough that does not stick to your hands.
Add the fat and knead.
Stretch it with a stick, leaving it at 1 mm. thick or less.
With a sharp knife cut 5x7cm rectangles.
Wet the two corners diagonally, overlap them and press to join them.
Insert the gullets into the back of a wooden spoon or skewers and dip them in plenty of boiling fat until golden brown and crispy.
Let cool.
Fill a bag with dulce de leche at both ends.
*Optional: make royal icing with egg whites and powdered sugar to cover the ends or cover them with chocolate coating.
