Humita is one of our most popular regional dishes with a heart of melted cheese and a bit of spice to add flavor to the winter. It is a thick and, at the same time, soft preparation made from corn and squash and can be eaten both on the plate and in chala, that is, in the leaves that wrap the corn cob.
