Special for Tucumán winters and a must-have dish on the family table on every national holiday, locro is a thick preparation made from ground yellow corn, meat or jerky, pig's legs and skin, bacon, dried beans and squash. It is usually accompanied by a spicy chili and onion sauce that enhances its flavor. A variety of this dish is the guascha locro, made with knife-cut corn, pumpkin, and vegetables and colored with paprika.
