This recipe originates from the sugar industry in Tucumán, but it's combined with a traditional, artisanal process. A variation of this recipe is dulce de leche tablets. Prepared similarly, they differ in this extra ingredient, which gives them a lighter color and a different flavor.
To make a batch of 700 tablets, you need 8 liters of sugarcane honey, 10 kilos of boiled and mashed sweet potatoes, and 12 kilos of white sugar.
Everything is placed in an 80-liter pan and boiled for 2 hours, stirring constantly. Then it's poured into a mold and left to cool and harden. Before the paste becomes too hard, the tablets are cut and then removed from the mold. They are left to dry for 30 minutes and then wrapped in cellophane.
