Alfeñique
This is one of the most traditional sweets in Tucumán, to sweeten your palate with the flavor of sugarcane.
Alfeñique Recipe (50 pieces)
Ingredients
1 kg cane sugar
1 cup water
100 ml lemon juice
Oil for the work surface
2 drops anise extract (optional)
Alfeñique Preparation
Make a thick syrup with the sugar and water.
Add the lemon juice. When it reaches the soft ball stage, remove from heat and add the anise extract.
Beat until the syrup thickens, cools slightly, and reaches a consistent consistency.
It is important to work with the syrup while it is still warm.
Pour it onto an oiled work surface and spread it with your hands until it turns white.
Take small portions, roll them into small logs, and tie them.
Let them air dry in a cool, dry place.
Wrap them in cellophane for presentation.
