Recipe for Sugarcane Honey Nougat Alfajores (20 units)

 

Ingredients for the dough

 

6 egg yolks

1 tablespoon of lard or beef fat

1 small glass of white vinegar

1 tablespoon of cognac

200 g all-purpose flour

8 tablespoons baking powder

 

Ingredients for the nougat filling

 

250 ml sugarcane honey

125 ml honey

125 g sugar

4 egg whites

 

Preparation of the dough

 

Mix the dry ingredients and add the liquids.

Mix until you obtain a firm dough.

Let it rest for 20 minutes.

Roll out the dough and cut out 4 cm diameter rounds.

Prick them with a fork and place them on a greased baking sheet.

Bake in a hot oven for 10 to 12 minutes.

 

Set aside.

 

Preparing the Filling

 

In a saucepan, heat the honey and sugar until the sugar dissolves and the honey begins to boil and foam.

Once the honey begins to boil, beat the egg whites with an electric mixer.

As soon as the honey foams, slowly pour the liquid in a thin stream over the egg whites while continuing to beat.

Beat until the mixture cools.

Once ready, assemble the alfajores with both cookies and, if necessary, cover them with clear cellophane.
